Because many restaurateurs are being taken to the cleaners.

Restaurant owners and managers should insist the company providing the service provide before and after pictures of all service performed.

This rule should be followed with all your cleaning service vendors. If you ask and they give you a hassle, well....(what does that tell you) following is a little of what I see in the world of Kitchen Exhaust Cleaning.

How about some afters? That looks like fun.

Once you foam or wash that stuff I would imagine you have to rinse it? Where does the run off go? And how to they sanitize the area so they can get back to cooking?

Depending there are various ways to handle the waste.
Most of the pics in this thread are gigs that received inferior service. But insist my price is to high.

How I attach plastic to the barrel is my "trade secret" that's why pics of the catch barrel are not in the pic sorry. I'm self taught when it comes to hanging the hoods.

I believe 20+ yrs of custom upholstery experience tie in well, when it comes to hanging a hood.

I can tell you that set up takes less than 5 minutes for me to do.
